Sunday - 5 Day Meal Planner 5/2

Monday: Pork Stew
Tuesday: Cheaty Ziti
Wednesday: Speedy Mediterranean Chicken
Thursday: Beef Potato in One
Friday: Bacon Alfredo Pizza

I will assume you have olive or vegetable oil, ¼ cup honey, corn starch, Tabasco, your favorite kind of pasta, grated parmesan cheese, salt and pepper.

From the store:
2 lbs ground sirloin
1 and ½ pounds the cheapest cut of pork you can find
1 rotisserie chicken
1 pkg precooked bacon
1 bag of salad
3 TBSP chopped parsley
3 large Idaho potatoes
2 onions
1 green pepper
1 pound ricotta cheese
1 pkg shredded cheddar cheese
2 pounds shredded mozzarella
¼ cup grated pecorino Romano cheese
2 pkgs pizza crust mix
1 pound pasta (ziti or ziti rigati)
2 cans diced tomatoes
1 can large butter beans
1 can beef stock
1 med jar spaghetti sauce
1 jar Alfredo Sauce
1 jar of salsa
Bay Leaves
½ cup sliced green olives
¼ cup golden raisins
1 loaf sour dough bread

On Sunday night you could go ahead and cut up the chicken if you want but you don't need to.

Monday - Pork Stew 5/3

1 1/2-2 lbs cheap cut of pork, trimmed of fat
1 large can diced tomatoes
1 can beef stock or beef bouillon
1 can large butter beans
1 yellow or white onion, chopped
1-2 tbsp A-1 or Tabasco and garlic sauce, optional
Salt and pepper to taste

Layer into a crock pot: meat, onion, stock, salt, pepper and tomatoes, making sure the meat is completely covered. Cover and set on high for at least 4 1/2 hours.

When meat is fork tender, break up with a fork then add butter beans. Simmer until serving time. Beans will turn mushy if they are left too long in the pot or stirred too often. Serve with sourdough bread.

Tuesday - Cheaty Ziti 5/4

1 lb Pasta (Ziti or Ziti Rigati)
1 lb Ricotta Cheese
1 lb Mozzarella Cheese (shredded)
1/4 cup grated Cheese (pecorino Romano is very nice)
2-3 Tbsp Chopped parsely
1 medium jar spaghetti sauce about 32 oz

Boil Pasta as per instructions on box. Drain and return to pot. Combine ingredients (saving a little sauce, Mozzarella, and grated cheese to sprinkle on top.) in pot and mix thoroughly.

Transfer to disposable aluminum pan, spread left over sauce, sprinkle with mozzarella, and grated cheese on top. Sprinkle with chopped parsley. Cover with aluminum foil and bake in pre-heated oven at 350 for approximately 45 minutes.

Serve with a bag of salad.
**you could add pepperoni to this if you need meat but add it to your shopping list too**

Wednesday - Speedy Mediterranean Chicken 5/5

1 tablespoon olive or vegetable oil
2 teaspoons curry powder
1 jar (16 oz) Old El Paso® Thick ‘n Chunky salsa
1/2 cup sliced green olives
1/4 cup golden raisins
1/4 cup honey
1 deli rotisserie chicken (2 to 2 1/2 lb), cut into 6 to 8 pieces, skin removed if desired

In 12-inch nonstick skillet, heat oil over medium heat. Stir in curry powder. Cook over medium heat 1 minute, stirring constantly.

2. Stir in remaining ingredients except chicken. Add chicken; turn to coat.

3. Cover; cook over medium-high heat 5 to 6 minutes, turning chicken occasionally, until sauce is bubbly and chicken is thoroughly heated

This is great with a side of pasta lightly tossed in olive oil and sprinkled with parmesan cheese.

Thursday - Beef Potato in One 5/6

2 lbs ground sirloin
1 small onion, diced
1/2 green pepper, diced
1 can diced tomatoes
2 bay leaves
1 1/3 cups water
3 large Idaho potatoes, cut in round slices
1 pkg shredded cheddar cheese
2 tbsp cornstarch

Brown beef, onions, peppers. Add salt and pepper to taste. Drain and add 1 cup water, bay leaves, tomatoes; simmer for 15 minutes. Remove bay leaves and add 1/3 cup water with cornstarch for thickening.

In another skillet, brown potatoes in a small amount of oil until tender, and then drain. Place potatoes in casserole dish and pour beef mixture over. Add cheese to top and brown in oven at 375 degrees for 10 minutes. Let cool then cut in squares for servings.

Friday - Bacon Alfredo Pizza 5/7

2 packages pizza crust mix
1 cup hot tap water
3/4 cup Alfredo sauce
1 lb shredded mozzarella cheese
4 slices bacon, fried and crumbled

Preheat oven to 425 degrees. Prepare pizza crust according to package directions. Pat dough into an 18 inch pizza pan lined with nonstick aluminum foil. Bake on lowest oven rack for 5 minutes.

Remove crust from oven and top with Alfredo sauce and crumbled bacon. Sprinkle with
shredded mozzarella. Bake on middle oven rack for 15-20 minutes or until cheese is melted and crust is light golden brown.
