Tuesday - Teriyaki-Glazed Burgers 4/13

Ingredients:
• 1 1/2 pounds ground beef
• kosher salt and pepper
• 1/4 cup teriyaki sauce
• 4 English muffins, split
• 1 pint cherry or grape tomatoes
• 3 kirby cucumbers, cut into spears

Directions:
1. Heat grill or grill pan to medium-high. Form the beef into four ½-inch-thick patties and season with ½ teaspoon salt and ¼ teaspoon pepper.
2. Grill the burgers to the desired doneness, 4 to 5 minutes per side for medium, basting with the teriyaki sauce during the last 2 minutes of cooking. Grill the English muffins until toasted, 1 to 2 minutes per side.
3. Sandwich the burgers in the muffins. Serve with the tomatoes and cucumbers.

Wednesday - Ham and Cheese Quesadillas 4/14



Ingredients:
• 4 10-inch flour tortillas
• 1 pound fresh mozzarella, thinly sliced
• 1/2 pound thinly sliced deli ham
• 1 cantaloupe, cut into small wedges

Directions:
1. Heat broiler. On one half of each tortilla, layer the mozzarella and ham. Fold the other half of each tortilla over to cover and place on a broilerproof sheet pan.
2. Broil until the cheese has melted and the tortillas are browned, 2 to 3 minutes per side. Cut into wedges and serve with the cantaloupe.

Thursday - Ravioli with Sautéed Zucchini 4/15

Ingredients:
• 1 pound cheese ravioli (fresh or frozen)
• 2 tablespoons olive oil
• 3 small zucchini, sliced into thin half-moons
• kosher salt and pepper
• 2 cloves garlic, thinly sliced
• 1/2 cup grated Parmesan (2 ounces)

Directions:
1. Cook the ravioli according to the package directions. Drain them and return to the pot.
2. Meanwhile, heat the oil in a large skillet over medium heat. Add the zucchini, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until just tender, 4 to 5 minutes. Add the garlic and cook for 2 minutes.
3. Add the zucchini mixture and 1/4 cup of the Parmesan to the ravioli and toss gently to combine. Serve with the remaining 1/4 cup of Parmesan.

Friday - Seared Skirt Steak With Mushroom Salad 4/16

Ingredients:
• 3 tablespoons fresh lemon juice
• 4 tablespoons extra-virgin olive oil
• kosher salt and pepper
• 2 8-ounce packages sliced mushrooms
• 1/2 cup shredded Jarlsberg or Swiss cheese
• 1/2 cup fresh flat-leaf parsley leaves, chopped
• 1 1/4 pounds skirt steak

Directions:
1. In a large bowl, combine the lemon juice, 3 tablespoons of the oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add the mushrooms, cheese, and parsley and toss to combine.
2. Cut the steak into pieces as necessary to fit in a large skillet. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Heat the remaining 1 tablespoon of oil in the skillet over medium-high heat. Cook the steak to the desired doneness, 4 to 5 minutes per side for medium-rare.
3. Slice the steak and serve with the mushroom salad
