Sunday - 5 Day Meal Planner 3/14

Monday: Grilled Tilapia with Smoked Paprika and Parmesan Polenta
Tuesday: Beef Tips
Wednesday: Tarragon Chicken
Thursday: Easy Cheesy Barbecued Sloppy Joes
Friday: Easy Chinese Stir-Fry

I will assume you have noodles, milk, salt, grated parmesan, olive oil, garlic powder, pepper, cooking spray, cheese slices and rice.

From the store:
2lbs lean chuck roast
1 pound pork tenderloin
1 pound ground beef
4 6 ounce tilapia fillets
4 boneless, skinless chicken breasts
Cottage cheese
1 cup sliced mushrooms
1 green pepper
1 onion
1 lemon
1 garlic clove
2 green onions
2 carrots
Fresh tarragon
2 large baking potatoes
Quick cooking polenta
Smoked paprika
1 envelope dry onion soup mix
Balsamic Vinaigrette Dressing
Hoisin Sauce
Barbecue Sauce
1 cup Sprite or 7 Up
4 hamburger buns
1 bag of your favorite chips


On Sunday night you could chop what you will need for the week but don't feel like you have to since it is easy enough to do later.

Monday - Grilled Tilapia with Smoked Paprika and Parmesan Polenta 3/15

Smoked paprika, a staple spice in Spanish cuisine, adds a heady flavor to this simple dish. Creamy polenta complements the full-flavored fish.

Ingredients:
Polenta:
4 cups fat-free milk
1 cup quick-cooking polenta
1/4 teaspoon salt
1/3 cup (1 1/2 ounces) grated Parmesan cheese
Fish:
1 1/2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (6-ounce) tilapia fillets
Cooking spray

Preparation:
To prepare polenta, bring milk to a boil in a medium saucepan; gradually add polenta, stirring constantly with a whisk. Reduce heat, and cook 5 minutes or until thick, stirring constantly; stir in 1/4 teaspoon salt. Remove from heat. Stir in cheese; cover and keep warm.

To prepare the fish, heat a large nonstick grill pan over medium-high heat. Combine oil, paprika, garlic powder, 1/2 teaspoon salt, and pepper in a bowl, stirring well. Rub fish evenly with oil mixture. Coat pan with cooking spray. Add fish to pan; cook 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.

Tuesday - Beef Tips 3/16

There's nothing like a mouthwatering meal of easy beef tips for dinner. With just five ingredients, it's a quick fix for a starving family. Tip the dinner menu in your favor.

Ingredients:
1 can cream of mushroom soup
1 cup 7-Up or Sprite
1 cup sliced mushrooms
1 envelope dry onion soup mix
2 lbs. lean chuck roast

Methods/steps:
Place beef in crockpot. Pour mushroom soup over meat and top with onion soup mix. Add 7-Up and mushrooms. Stir well. Cover and cook on low for 6 to 8 hours. Serve over buttered noodles for best results.

Wednesday - Tarragon Chicken 3/17

Ingredients:
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
2 tablespoons extra-virgin olive oil
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
1 garlic clove, minced
2 teaspoons minced fresh tarragon
1/8 teaspoon salt

Preparation:
1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken evenly with 1/4 teaspoon salt.
2. Combine olive oil and remaining 5 ingredients in a small bowl, stirring well with a whisk. Heat a large nonstick skillet over medium-high heat. Add 2 teaspoons oil mixture to pan, spreading evenly over bottom of pan with a wide spatula. Add chicken; cook 2 minutes. Drizzle chicken with 2 teaspoons oil mixture. Turn chicken over; cook 2 minutes. Drizzle remaining oil mixture over chicken; reduce heat to low. Cover and cook 2 minutes or until done. Transfer chicken to a serving platter. Pour pan drippings over chicken; serve immediately.

Serve with half of a baked potato with cottage cheese!

Thursday - Easy Cheesy Barbecued Sloppy Joes 3/18

Ingredients:
What You Need!
1 lb. ground beef
1 green pepper, chopped
1/4 cup chopped onions
1 cup KRAFT Original Barbecue Sauce
4 hamburger buns
4 KRAFT Singles

Directions:
Make It!

BROWN meat in large skillet; drain. Add vegetables; cook and stir until crisp-tender.

STIR in barbecue sauce; cook until heated through, stirring occasionally.

FILL buns with meat mixture and Singles

Serve with chips!

Friday - Easy Chinese Stir-Fry 3/19

What You Need!
1 tsp. oil
1 lb. pork tenderloin, cut into thin slices
3 carrots, sliced
1/3 cup KRAFT Balsamic Vinaigrette Dressing
2 Tbsp. hoisin sauce
2 green onions, thinly sliced

Directions:
Make It!

HEAT oil in large skillet on medium-high heat. Add meat and carrots; cook and stir 5 min.

STIR in dressing and hoisin sauce; stir-fry 7 min. or until carrots are crisp-tender, stirring frequently.

ADD onions; cook 1 min

Serve over rice
