Tuesday - Apple Corned Beef Brisket for the Slow Cooker 11/9

Ingredients:
8 small red potatoes, quartered
· 1 large onion, peeled and cut into wedges
· 1 apple, peeled, cored and finely diced
· 3 -4 lbs corned beef brisket
· 1/2 head cabbage, cut into chunks
· 4 cups apple cider
· 3/4 cup packed brown sugar
· 2 tablespoons Dijon mustard
· 1/4-1/2 teaspoon ground cloves
· 1/4 teaspoon black pepper


Directions:
1. Place red potatoes, onion, and apple in a large slow cooker.
2. Top with corned beef brisket.
3. Place cabbage over top.
4. In a small bowl, whisk together cider, brown sugar, mustard, cloves and pepper; pour into slow cooker.
5. Cook on low for 6 - 8 hours, or high for about 3 - 4 hours.
